
Hardness Stabilization in the
Brewery
In spring 1997, a penac-kat had been installed on the main water inlet of
a brewery. Consequently, they confirmed numerous changes:
Lime in the water
- No new deposits in the cooling system, existing ones
became soft
- Lime separates from the brew during boiling; because
of that less unwanted lime bases remain during the brewing process
- During the heating process, lime separates from the
water
Better beer
Beer in the storage tank clears faster, consequently
reduced suspended matter in the beer.
At the same temperature, the beer ferments faster.
Even with higher fermentation temperatures no
reduction of quality (compatibility)
Subjectively improved aroma profile
Since the kat was applied shortly after the opening of the brewery, these results could not be compared with previous data. However, the brewery as well as their customers are very happy and they are not prepared to run the brewery without the penac-kat anymore.
